2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup sugar
1/2 cup unsalted butter, softened
3 large eggs
1 teaspoon vanilla extract
1 teaspoon lemon zest
1/4 cup lemon juice
3/4 cup buttermilk
1 cup white chocolate chips


Instructions

Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
In a large bowl, beat together sugar and butter until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract and lemon zest.
Gradually add the flour mixture to the butter mixture, alternating with buttermilk, starting and ending with the flour mixture. Mix until just combined.
Fold in white chocolate chips. Pour batter into prepared loaf pan.
Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
