1/2 cup unsalted butter, softened
3/4 cup granulated sugar
1 large egg
1 teaspoon pure vanilla extract
1 3/4 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1 cup white chocolate chips
1/3 cup peppermint pieces


Instructions

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
Chop peppermint into small pieces until you have about 1/3 cup. Set aside.
In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract until well combined.
Add the flour, baking soda, and salt to the wet ingredients and mix until just combined. Fold in the white chocolate chips.
Roll the dough into 18 small balls (about 1.5-2 inches in size). Gently press the tops of the dough balls into the chopped peppermint pieces to coat.
Place the dough balls onto the prepared baking sheet, ensuring they are spaced evenly apart.
Bake for 10-11 minutes, checking at the 10-minute mark. The cookies should be slightly soft but set.
Let the cookies sit on the baking sheet for 1-2 minutes before carefully transferring them to a wire rack to cool for 10 minutes.
