Yaki Onigiri, or grilled Japanese rice balls, offer a delightful twist on traditional onigiri by adding a crispy, flavorful crust. Whether you choose the savory miso or the umami-rich soy sauce version, these rice balls are a satisfying snack or light meal that captures the essence of Japanese comfort food.


Ingredients

Onigiri:
2 cups uncooked short-grain rice
2 cups water
Miso Flavor:
1 tbsp miso
2 tsp mirin
2 tsp sake
2 tsp sugar
1.5 tbsp butter
1 tsp finely chopped chives (for garnish)
1 tsp sesame seeds (for garnish)
Soy Sauce Flavor:
1.5 tbsp vegetable oil
1 tbsp soy sauce
1.5 tbsp everything bagel seasoning
1.5 tbsp butter


Instructions

Cook the Rice:
Cook the rice according to the instructions for your rice cooker or follow package directions for stove-top cooking.
Prepare the Miso Paste:
While the rice is cooking, mix all the miso paste ingredients (miso, mirin, sake, and sugar) together in a bowl until well combined.
Shape the Onigiri:
Once the rice is cooked, divide it into 6 equal portions.
Using a piece of cling wrap, shape and squish each portion into a triangle shape.
Miso Flavor Onigiri:
Heat a cast iron skillet over medium heat and add the butter.
Grill the onigiri for about 1 minute on each side, ensuring it is well coated with butter.
Brush the miso paste over each side of the rice balls and continue grilling until each side is crispy.
Serve immediately, garnished with chopped chives and sesame seeds.
Soy Sauce Flavor Onigiri:
Heat a cast iron skillet over medium heat and coat it with vegetable oil.
Grill the onigiri for about 1 minute on each side.
Brush soy sauce over each side every time you flip the rice balls, turning them several times to ensure even coating and crispiness.
Once crispy, turn off the heat and place the grilled onigiri on a plate.
Top each with 1/2 tablespoon of butter and garnish with everything bagel seasoning. Serve immediately.
