Ingredients
1 teaspoon paprika
1 teaspoon dried parsley
½ teaspoon oregano
½ teaspoon chili powder
½ teaspoon garlic powder
¼ teaspoon cumin
¼ teaspoon salt
¼ teaspoon freshly ground black pepper
1/8 teaspoon cayenne pepper
2 tablespoons extra-virgin olive oil, divided
2 cod fillets
1 tablespoon unsalted butter, or use ghee for Paleo & Whole30
Zest and juice of 2 limes
Cooked rice, quinoa, or cauliflower rice, for serving
Your favorite vegetable, for serving
Instructions
In a small bowl, combine all spices and mix well. Brush the cod fillets with 1 tablespoon olive oil, then rub them with the spice mixture. Refrigerate for at least 30 minutes, or up to 12 hours.
Preheat the oven to 450°F. Place the cod fillets on a foil-lined baking sheet and roast for 10-12 minutes until the fish flakes easily and is opaque throughout.
Meanwhile, in a small saucepot, melt the butter with the remaining tablespoon of olive oil. Add lime zest and juice and swirl to mix. Serve the cod over your chosen accompaniments and top with the lime butter.
