Ingredients
4 cups grated zucchini 🥒
1/2 cup mozzarella cheese 🧀
1/3 cup Parmesan cheese 🧀
1 egg 🥚
1 tsp garlic parsley salt 🧂
1 cup grated cheese of choice (for topping) 🧀
Instructions
1️⃣ Squeeze all the juices out of the grated zucchini. (Tip: Use a cheesecloth or a clean kitchen towel to help remove as much liquid as possible.) 💧
2️⃣ In a bowl, combine the grated zucchini, mozzarella cheese, Parmesan cheese, egg, and garlic parsley salt. Stir until everything is well combined. 🍲
3️⃣ On a lined baking dish, spread out the zucchini mixture in a thin layer, about half an inch in thickness. This allows the bottom to crisp up nicely. 🧑🍳
4️⃣ Bake at 425°F (220°C) for 15 minutes. ⏲️
5️⃣ Remove the baked crust from the oven and top it with your choice of cheese (mozzarella or Mexican cheese works great). Bake for an additional 2-5 minutes, just until the cheese melts and turns golden brown. 🔥
6️⃣ Slice and serve while it’s still hot. Enjoy! 🍽️
