Ingredients
2 tablespoons butter
½ onion, thinly sliced
1 small zucchini, sliced into rounds ⅛ to ¼ inch thick
1 small yellow squash, sliced into rounds ⅛ to ¼ inch thick
2 large cloves garlic, minced
½ cup heavy cream
¼ cup grated parmesan
1 cup shredded smoked gouda
Instructions
Preheat your oven to 450°F (232°C).
In an oven-proof skillet, melt the butter over medium heat. Add the sliced onion and cook until the edges start to brown, about 5 minutes.
Add the minced garlic and cook for 1 minute until fragrant.
Pour in the heavy cream and let it simmer until bubbly and slightly thickened. Slowly stir in the grated parmesan cheese until incorporated.
Add the sliced zucchini and yellow squash to the skillet. Cook for 4-5 minutes, allowing the vegetables to soften slightly in the cream mixture.
Sprinkle the shredded smoked gouda evenly over the top of the zucchini and squash.
Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the cheese is melted and golden brown on top.
Remove from the oven, let cool slightly, and serve warm.
