Ingredients
1 9-in deep dish pie crust (homemade or store-bought)
1 1/2 cups / 300 g / 10.5 oz white granulated sugar
1 1/2 cups / 150 g / 5.3 oz shredded coconut
1 1/2 cups / 170 g / 6 oz graham cracker crumbs
1 1/2 cups / 170 g / 6 oz chopped pecans or walnuts
1 cup / 225 g / 8 oz egg whites (from 7 to 9 eggs)
Instructions
Preheat the oven and set a baking rack in the center. Preheat to 350°F / 180°C / gas mark 4.
Prepare the pie crust. If homemade, fit into a 9-in deep-dish pie pan and crimp edges. Refrigerate while preparing the filling. If premade, ensure it is thawed.
Mix the filling. Combine sugar, coconut, nuts, and graham cracker crumbs in a large bowl. Add egg whites and stir until well combined and moistened.
Bake the pie. Pour the filling into the crust, smooth the top, and bake for 45 to 55 minutes until golden brown.
Cool the pie on a rack for at least 20 to 30 minutes before serving. Serve warm, at room temperature, or chilled.
Store leftovers covered in the refrigerator for up to 5 days.
