Description
Mini strawberry hand pies made quickly in an air fryer using refrigerated pie crusts.
Ingredients

- 2 whole refrigerated deep dish pie crusts
- 1 cup strawberries, small-diced
- 3 tbsp granulated sugar
- 2 tbsp cornstarch
- 2–3 tsp lemon zest (from one medium lemon)
- 1 large egg
- 2 tsp cream or milk
- 1/2 cup powdered sugar
- 3–4 tsp lemon juice
Instructions
- In a small bowl, mix the diced strawberries, granulated sugar, cornstarch, and lemon zest; set aside.
- Unroll the pastry and cut each pie crust into 8 rounds for a total of 16 rounds.
- Place about 1 tablespoon of the strawberry mixture in the center of 8 rounds, then top each with a remaining round and seal the edges with a fork.
- Poke a few small holes in the top of each pie to vent, and brush each top with the beaten egg mixed with the cream or milk.
- Air fry the pies at 350?F (175?C) until golden, about 8?12 minutes depending on your air fryer; allow to cool before serving.
- Optional: whisk the powdered sugar with the lemon juice to make a glaze and drizzle over cooled pies before serving.
