  • 10 oz fresh spinach
  • 8 oz mushrooms, sliced
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1 cup Parmesan cheese, grated
  • 3 cups Alfredo sauce
  • 2 tbsp olive oil
  • 1 clove garlic, minced
  • Salt and pepper, to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Prep Spinach & Mushrooms Heat olive oil in a large skillet over medium heat. Add garlic and sauté for 1 minute. Add mushrooms and cook until soft, about 5-6 minutes. Incorporate spinach and continue cooking until it wilts. Season this mixture with salt and pepper, then set aside for later use.
  2. Layer Lasagna In a greased 9×13 baking dish, begin by spreading a thin layer of Alfredo sauce. Place 3 lasagna noodles over the sauce, and top with portions of the spinach-mushroom mixture, followed by dollops of ricotta, a sprinkle of mozzarella, and a dusting of Parmesan. Repeat these layers until all ingredients are utilized, ending with a final cover of Alfredo sauce and a generous amount of mozzarella cheese.
  3. Bake Preheat your oven to 375°F (190°C). Cover the prepared lasagna with aluminum foil and bake for 25 minutes. Remove the foil and continue to bake for an additional 10-15 minutes, until the lasagna is bubbly and golden on top.
