Easy Pancake Poppers 🥞

Welcome back to my kitchen! Today, I have a delightful and fun breakfast treat for you: Easy Pancake Poppers. These bite-sized pancake bites are perfect for busy mornings, brunch parties, or just a fun twist on the classic pancake breakfast. Let’s dive right in!

Ingredients

  • 1 1/2 cups all-purpose flour 🌾
  • 3 1/2 teaspoons baking powder 🥄
  • 3/4 teaspoon salt 🧂
  • 1 tablespoon granulated sugar 🍚
  • 1 cup plus 1 tablespoon milk 🥛
  • 1 large egg 🥚
  • 1 teaspoon vanilla extract 🍦
  • 3 tablespoons unsalted butter, melted 🧈
  • 1 large egg white 🥚
  • 1/2 cup mini chocolate chips (optional) 🍫

Instructions

  1. Preheat your oven to 375°F (190°C). Spray a cake pop or mini muffin pan with nonstick cooking spray. Set aside. 🔥
  2. In a bowl, combine the flour, baking powder, salt, and sugar. Add the milk, whole egg, vanilla, and melted butter. Whisk until mostly smooth. Don’t overmix; it’s okay if some lumps remain. 🥄
  3. In another bowl, beat the remaining egg white until smooth peaks form. Gently fold into the batter until incorporated. Add mini chocolate chips if using. 🍫
  4. Using a cookie scoop, fill each cake pop mold or muffin cup with pancake batter (fill it almost all the way) and place in the oven. 🧁
  5. Bake for 12 minutes or until a toothpick inserted in the middle comes out clean. Immediately invert pancake poppers onto a wire rack and let cool for 5 minutes or until they’re safe to handle. Serve with your favorite toppings. ⏳🍯

Tips for Perfect Pancake Poppers

  • Don’t Overmix: When combining the wet and dry ingredients, be careful not to overmix the batter. A few lumps are perfectly fine and will result in fluffier poppers.
  • Beat the Egg White: Beating the egg white until smooth peaks form and then folding it into the batter adds extra air, making your pancake poppers light and airy.
  • Customize: Feel free to add other mix-ins like blueberries, chopped nuts, or even a bit of cinnamon to make these poppers your own.
