Description

Quick skillet steak bites with sautéed zucchini in garlic butter.


Ingredients

Scale
  • 1 lb steak (sirloin, ribeye, or New York strip), cut into 1-inch cubes
  • 1 medium zucchini, cut into half-moons
  • 3 tablespoons butter
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: Fresh parsley, chopped, for garnish

Instructions

  1. Pat the steak bites dry with paper towels and season with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add steak bites to the hot skillet in a single layer and sear for 1-2 minutes per side until browned, then remove and set aside.
  4. Add butter to the same skillet; once melted, add minced garlic and cook about 30 seconds until fragrant.
  5. Add the zucchini to the skillet and cook 3-5 minutes, stirring occasionally, until tender-crisp.
  6. Return the steak bites to the skillet and toss to coat with the garlic butter.
  7. Cook another 1-2 minutes until the steak is heated through.
  8. Garnish with fresh parsley if desired and serve immediately.
