Ingredients
1 pound boneless, skinless chicken breasts, cut into 1-inch chunks
Marinade:
2 tbsp soy sauce
1 tbsp sriracha
2 tbsp white vinegar or apple cider
Stir fry:
1 tbsp vegetable oil
1 tsp sesame seed oil
10 cloves garlic, finely chopped
2–4 jalapeño slices, thinly sliced (adjust to spice preference)
2 whole bell peppers, cut into 1-inch pieces
1 tbsp sugar
1 tsp ground pepper
1 tsp garam masala or any curry powder
2 tbsp chopped fresh cilantro leaves
Instructions
In a bowl, combine soy sauce, sriracha, and vinegar. Add chicken and mix thoroughly. Let marinate while prepping vegetables.
Heat oils in a large skillet over medium-high heat. Sauté jalapeño and garlic for 30 seconds.
Add chicken and cook until golden, about 5 minutes. Add sugar, and toss in the bell peppers and ground pepper. Continue to cook for another 5 minutes or until chicken is fully cooked and peppers are tender yet crisp.
Stir in garam masala, mix well, then add cilantro.
Serve garnished with sesame seeds, fresh cilantro, and additional jalapeño slices.
