½ cup high-quality olive oil
1/3 cup Romano Cheese, finely shredded
1 Tablespoon white vinegar
1 egg yolk
1 teaspoon lemon juice
1 dash salt
¼ teaspoon black pepper
2 small cloves garlic, minced
1 whole anchovy filet, or 1/2 tsp anchovy paste


In a medium bowl, whisk together all ingredients except for the garlic and anchovy. Whisk vigorously for 60 seconds until well combined.
